Here is the MIA Cornbread dressing. I really appreciate my mom sending this! It is one of those recipes that she throws together by “feel” and then it just all comes together. We always enjoy this one at Thanksgiving. My grandmother would add oysters….not sure about that, but you can decide for yourself.
Cornbread Dressing (serves 8-10)
2 packages Martha White Cornbread mix (made according to package directions)
4 slices of wheat bread
2 teaspoons sage
1 teaspoon poultry seasoning
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth or turkey broth
½ cup of each: celery, onion
1 Tablespoon olive oil
6 egg whites
Sauté celery and onion in oil until wilted. Crumble cornbread up in a large bowl. Crumble bread crumbs and place in bowl. Add seasoning, broth and egg whites and mix well.
Place in a 9 x 13 pan sprayed with nonstick cooking spray.
Bake at 375 for 45 minutes.

Lisa, I made your pumpkin pie and sweet potato souffle. They were both divine...but the sweet potato was like eating candy. Thanks so much for posting these great recipes. They will be a tradition in my house!
